Mediterranean Hummus Flatbread
This is a summery, colorful, and EASY lunch and dinner, that you can prep ahead of time, and put together in minutes.
This is a great combination of vegetables, flavored with an herby, lemony marinade, perfect for the nicer weather. This can be made vegan by simply omitting the feta cheese (or using vegan cheese).
Ingredients:
Lavash, pizza crust, or flatbread
Veggie topping:
1 tomato, diced
1/2-2/3 cup cucumber, diced
1/4 cup onion, sliced
1/2-2/3 cup spinach leaves, chopped
2-3 garclic cloves, minced
1/4 cup olives (green and/or black), chopped (optional)
1 TB fresh dill, chopped
1 TB fresh parsley, chopped
1 TB fresh basil, chopped
1/4 tsp paprika
1/4-1/2 tsp chili powder or cayenne (optional)
1 Tsp lemon juice (or more, to taste)
Salt and pepper, to taste
1/4 cup crumbled feta (optional)
Handful of arugula (optional)
Combine all the above ingredients into a mixing bowl, and adjust to taste. Let this sit for 10-15 minutes so that the flavors mix nicely and marinate.
Hummus:
1/2 cup store bought plain hummus
3 cloves garlic, peeled
1/2 cup cilantro, roughly chopped
1 TB Extra virgin olive oil
1/2 jalapeño (optional if you like spice)
1 TB water
Place all the ingredients in a blender and blend till smooth. Add salt as needed to taste.
Place the flatbread or lavash in the oven to warm and slightly crispen. Spread a layer of the hummus onto the flatbread, followed by the vegetable mixture. You can top off with arugula, but this is optional. Serve immediately and enjoy!
